Improve your cooking skills! Participants will work closely with our chefs to learn a variety of essential French Cuisine cooking techniques. The results: mastering fundamental cooking skills and building confidence.
Six Hands-On Classes
Mondays, 18:00 to 20:00
Class 1: Knife Skills – Alliums
Class 2: Stocks & Butchery Skills (Chicken Stock, Vegetable Stock)
Class 3: Rice (Pilaf, Risotto)
Class 4: Cooking Fish (Pan-Seared)
Class 5: Egg-Based Sauces (Mayonnaise, Hollandaise)
Class 6: Desserts (Lemon Meringue Pie – Almond Crust)*
*Contains almonds.
This series is gluten free however it is not dairy free. Substitutions cannot be made as it will alter the techniques taught.

Participants will work closely with our chefs to enhance the techniques they learned in Series 1 and learn a variety of new cooking skills.
Prerequisite: You must have taken our Series 1 in order to register for Series 2.
Class 1: Spices and Grains – Couscous with Persian Spices, Barley with Herbes de Provence, Spelt with Cajun Spices
Class 2: Dough – Working with Puff Pastry and Gougères
Class 3: Sauces – Crème Fraiche, Tomato and Bechamel – Chicken Parmesan
Class 4: En Croûte – Salmon Coulibiac with Rice
Class 5: Potatoes and Yams – Sweet Potato and Ricotta Gnocchi, Potato Gnocchi, Beurre Noisette and Sage
Class 6: Desserts (Soufflé) – Chocolat Soufflé, Crème anglaise and Dark Chocolate Tuile
